The kitchen.

Adobo from scratch. Pork shoulder slow-roasted overnight. Plantains pressed twice. A menu that reads like a love letter to abuela's kitchen — built in Portland with care, fire, and a heavy hand on the sazón.

02 — La Historia

From Loíza
to Portland.

Bomba is a drum, a dance, a conversation between the dancer and the drummer. It was born on the northeast coast of Puerto Rico — in Loíza, where the African and Taíno and Spanish roots of the island braid loudest.

The kitchen here works the same way. Recipes from three grandmothers, arguments about the right amount of recao, and the willingness to feed everyone who shows up — that's what we brought from the island. The rain is from Portland.
